Preparation
Standard Prepartion: Simply place your tea bag or loose herbs (approx. 1-2 tsp. for 8-12 oz of water) in your mug and add boiling (or nearly boiling) water. Allow to steep for 5-10 minutes.
Herbal Infusion: Herbal infusions can be consumed both warm or cold. Place either loose herbs or tea bag in a quart or liter of water - typically 1-2 spoonfuls for a quart (16 oz mason jar), 3-4 for a liter (32 oz mason jar). Add boiling (or nearly boiling) water and allow to steep at room temperature for a few hours or overnight (preferred). Tea can be reheated before drinking, or stored in the fridge for a cool beverage. The best way to prefer an herbal infusion is to place herbs & water in a pot, bring to a boil, lower heat to a slow simmer (for approx. 20 minutes), and allow to steep overnight.
Herbal Decoction: For best flavor and extraction of herbal properties, an herbal decoction preparation is most recommended. To make a decoction, place 1-2 tsp. in a small pot with 12 oz of water. Bring to a near boil, and then quickly dropping heat down to a slow simmer. Simmer herbs for 20+ minutes. After simmering, turn of heat and allow herbs to steep for 20+ minutes. Often the sweeter herbs (such as cinnamon, liquorice, goji berries) will shine better if the tea steeps for 20 minutes after simmering.
